Nicole Monturo’s Shrimp & Crab Wild Rise Casserole
Ingredients:
- 1 bag frozen shrimp
- 1 pkg. imitation crab meat
- 2 boxes Uncle Ben’s Wild Rice®
- 4 tbsp. butter
- 1 medium onion – finely chopped
- ¼ red bell pepper – chopped
- 1 small pkg. sliced mushroom
- 2 tbsp. flour
- 1 ½ cups chicken broth
- ½ cup dry white wine (Pinot Grigio, Sauvignon Blanc)
- ½ tsp. salt
- ½ tsp. garlic powder
- 3 tbsp. Parmesan cheese
Preparation:
- Cook rice according to package.
- Cook shrimp
- Sauté mushrooms and onions, adding in pepper and butter.
- Mix everything except for the Parmesan cheese together and place in casserole dish.
- Bake at 350°F for 30-40 minutes, uncovered.
- Sprinkle with Parmesan cheese and serve!
