Nicole Monturo’s Shrimp & Crab Wild Rise Casserole

nicole monturo shrimpIngredients:

  • 1 bag frozen shrimp
  • 1 pkg. imitation crab meat
  • 2 boxes Uncle Ben’s Wild Rice®
  • 4 tbsp. butter
  • 1 medium onion – finely chopped
  • ¼ red bell pepper – chopped
  • 1 small pkg. sliced mushroom
  • 2 tbsp. flour
  • 1 ½ cups chicken broth
  • ½ cup dry white wine (Pinot Grigio, Sauvignon Blanc)
  • ½ tsp. salt
  • ½ tsp. garlic powder
  • 3 tbsp. Parmesan cheese

Preparation:

  1. Cook rice according to package.
  2. Cook shrimp
  3. Sauté mushrooms and onions, adding in pepper and butter.
  4. Mix everything except for the Parmesan cheese together and place in casserole dish.
  5. Bake at 350°F for 30-40 minutes, uncovered.
  6. Sprinkle with Parmesan cheese and serve!
